Veggie Outback Meal
With Joe being a vegetarian, I've had to be really creative when cooking. Although I could easily make pasta every night, I've really tried to branch out and experiment with all the veggie meat options out there...and at this point I would even dare to say I'm a little bit of an expert.
I've tried almost all of them and can honestly MOST of them are pretty damn good! Especially if you're creative in how you prepare them. Case in point:

The other night I experimented with some seasoned "chicken breasts" and "bacon" and remade an Outback classic - Alice Springs Chicken. Add a side of baked sweet potato fries and steamed broccoli and you've got a great meal!

Reaching Milestones and A Great Weekend
Yesterday Nash and I got to spend the whole day together. We went to Gymboree in the morning (which we don't always do because it's at 10 am which is usually right in the middle of his nap). We wowed the other mommies with our two teefs (teeth) and even managed to show off our almost crawling skills. Here's a little video I took of him practicing.
Then we made the trek to Publix to do the grocery shopping for the week. He only last about half way sitting in the cart before he wanted to be held, so I put him in the Baby Bjorn and we finished up. Poor little man was exhausted by the time we got home. We spent the rest of the afternoon playing, practicing our skills and even took a nap in the middle of the living room with Mama.
Today we slept in a bit (740), but resumed our normal play time. Mornings for us usually include milk, diaper change, breakfast (we had pears and barley today), solitary playtime in our room (with lots of toys), then either a bit of Yo Gabba Gabba or some jumper time. Then we go down for our nap around 9-930.
After our nap this morning, we packed everything up and headed to the park. We don't actually have any good parks near our house (reason #1 why we are moving), but there's a park kinda close that we don't usually go to because it's a bit ghetto. But we decided to brave it today to get outside. We even went in the baby swing! We took a stroller ride around the park to the lake where lots of people were swimming. There was a sign about amoebas and parasites though so we opted not to let him test the water.
After our park trip, we stopped by Home Depot to pick up some stuff to finish off our front room make over. Once we finish with that room, it's time to take pictures and list the house! I wasn't feeling too well in HD though (combo of a tough run this morning and too much heat), so we had to hurry up. Plus Muffin was ready for a nap by then.

Up Close and Personal
What a long week. I'm so glad to be at home finally and am gearing up for an amazing weekend with the fam. I've missed my little muffin so much...it hurts to even think about it.
Every night when I get home, Joe and Nash are waiting outside for me. After I pull into the garage (while smiling and waving frantically...dangerous), I jump out and run to hug my little man. I smother him with Mama kisses and then we go check the mail together. It's become our daily ritual that propels me to get through the work day. Then we spend a little time together (not much since he's usually pretty tired by the time I get home) before getting our baby bath, reading a bit, drinking some milk, then falling asleep in Mama's arms while she sings to us. The life of a baby, let me tell you.
And every night I'm so sad to put him down...even though I am thankful to have a few minutes to unwind. He's just too sweet...
In fact, I think he is so precious that I decided to enter him in the Gerber Baby contest. Apparently a panel of judges will select one baby from all entrants (currently at 45,000) to be their next spokesbaby! Also, you have to select what stage your baby is in (crawler, supported sitter, etc...) and one entrant from each category will win an iPad (people vote on these winners). So I found the cutest photo ever and submitted it.
I cropped it nice and tight on his cute little face and thought, now there's a Gerber baby. Only one problem. Gerber said no way. Apparently it's written in the rules that you can't enter a photo of a naked baby or one in a bathtub. WTF.
So now I have to catch another priceless smile like the one above...which is not easy since he gets so distracted by the camera these days. Thank god I have until June 30th to enter. WE NEED $50,000! Next step will be to shamelessly promote said pic to earn as many votes as possible!!

Friday's Fashion Wrap Up
This week I started taking pics of my outfits every day, so that I could get in on the linky parties everyone does. This week I will just take pics because I need to figure out how to do the linky thing before I get it all screwed up. I decided to bring in a mirror since there are no good full-lengthers here in the office. This should simplify the picure taking...but will work much better when I get moved into my new office!
